Impossible Coconut Custard Pie From: 40 Favorite Impossible Pies: Main Dishes & Desserts

2 cups milk
4 large eggs
1/2 cup granulated sugar
1/2 cup Bisquick® baking mix
1 teaspoon vanilla extract
1/4 cup butter, melted
1/4 teaspoon salt
1 cup sweetened, flaked coconut, packed

Preheat oven to 350º. Spray a 9” X 1-1/2” glass pie plate with cooking spray. Mix all ingredients together in a blender 1 minute or using an electric mixer 2 minutes or until smooth. Pour into pie plate. Bake 45-50 minutes or until knife inserted into center comes out clean. Let cool completely before serving.
