2 cups diced zucchini
1 cup diced tomato, well drained1/2 cup finely chopped onion
1 cup shredded Swiss cheese (or cheese of your choice)
3/4 cup Bisquick® baking mix
1-1/4 cups milk
3 large eggs
3/4 teaspoon salt1/2 teaspoon dried thyme
Pinch of ground black pepper
Preheat oven to 400ยบ. Spray a 9” X 1-1/2” glass pie plate with cooking spray. Mix together zucchini, tomato, onion and cheese. Spread mixture in pie plate. In a small bowl, beat remaining ingredients together with a wire whisk until well blended. Pour into pie plate. Bake 45-50 minutes or until knife inserted in center comes out clean. Let stand at least 10 minutes before serving.
